This recipe for double pumpkin pudding is quick, easy, & delicious. Ever better, it uses leftover roast pumpkin, so nothing goes to waste!
One part of this double pumpkin pudding is pumpkin and banana flavour and the other part is cacao flavour. Hence the ‘double’ in the name. I couldn’t choose which flavour I liked best, so I made both and combined them in one bowl of pumpkin pudding goodness. I ate this for breakfast-yes honestly I did– but of course it’s just as fabulous as a dessert. It would also work as a pie filling, which I have yet to try. The pumpkin I had was left over from dinner the night before, so this pudding was super-quick to make. Just throw in the ingredients, ‘woosh’ them together and you’re done. You don’t even have to scoop it into a bowl if you don’t want to; straight out of the food processor is good too (don’t tell anyone, but I have done that too, so you get no judgement from me).
If you don’t have leftover roast pumpkin, just make some fresh, let it cool and make this recipe as instructed below. I used really ripe banana as a sweetener, but if you don’t like the taste of banana, you can use more liquid sweetener. You can choose from things like agave syrup, maple syrup or honey.
The same principle goes for the cacao. If you don’t like it, leave it out altogether or substitute it for something like a dash of cinnamon.
Let’s get into the kitchen and make this double pumpkin pudding!
Gather all the ingredients and add everything into the foodprocessor except for the cacao powder. This picture is a good example of what I mean when I say “ripe banana”. The left banana is not ripe yet, the right one is.
Put everything into the foodprocessor, except the cacao powder, and blend into a fine pudding
Scoop out half of the pumpkin puddin and blend in the cacao powder and there you have your double pumpkin pudding
Double Pumpkin Pudding

Ingredients
- 1 cup roasted pumpkin, packed firmly
- 1 ripe banana
- 1 pinch salt
- maple syrup to taste (I used 1 tbsp)
- 2 tbsp cacao powder
Instructions

Put all the ingredients except the cacao powder into the food processor and ‘woosh’ everything into a nice and finely blended pudding

Taste to see if this is to your liking. If you want it sweeter, add more maple syrup

Scoop half the pudding into a separate bowl. Add the cacao powder to the remaining pudding and blend until combined

Scoop out the cacao flavoured pudding into the bowl and you are already done. Enjoy!
